Kaum Bali: A Dining Concept Inspired by Indonesian Indigenous Tribes

Our archipelago offers various kind of cuisine which is shameful if we left it unexplored. After launching its first Kaum Bali branch at Potato Head Hong Kong, PTT Family opens the second outlet at Potato Head Beach Club Bali. Kaum, which means “clan” or “tribe” in Indonesian, pays tribute to the more than 600 ethnic groups that make up Indonesia. Marking PTT Family’s commitment to place Indonesia’s rich culinary heritage at the centre of the world gastronomic map, Kaum celebrates and presents a taste of Indonesia’s culinary origins inspired by the Archipelago’s indigenous tribes to a wider global audience.

Kaum are created by culinary collective which are PTT Family CEO Ronald Akili, Kaum Brand Director Lisa Virgiano and Executive Chef Antoine Audran. With their respectively expert skills on culinary and business, they explored the vast islands of Indonesia and worked closely with remote tribal communities and independent local producers to develop Kaum’s concept and discover Indonesia’s rare and almost-forgotten ingredients and cooking techniques. Different from its counterpart in Hong Kong, Kaum Bali offers menu that highlights the Archipelago’s first-rate produce and often overlooked ingredients. A testament to the skill of Indonesia’s local producers and “taste of terroir”, Kaum Bali’s menu incorporates regionally sourced products from small-scale, responsible producers and tropical indigenous ingredients including Jatiluwih Heirloom Rice, Amed Sea Salt, Singaraja Lapciong, Cabe Jawa (Javanese long pepper) and Palm Sugar.

Those fine local ingredients are turned into some interesting main courses, side dishes, and desserts. Nasi Goreng Cabe Asap, Nasi Goreng Babi, Ayam Betutu Klungkung, Gado-Gado Kaum, Bubur Sum Sum and Buah Es Krim Rujak are the few choices among the menu that can be found at Kaum Bali. In addition to these native indigenous ingredients, Kaum’s philosophy that roots down to the traditional craftsmanship of Indonesian tribal heritage and deep traditions is also reflected in the design of the restaurant. Kaum Bali’s interior celebrates Indonesia’s traditional craft techniques combined with PTT Family’s signature contemporary architecture style. Wooden panels, hand-carved by artisans in Toraja, South Sulawesi, were individually stamped onto 828 concrete wall panels to create a space imbued with uniqueness and tradition. Long wooden dining tables, made with high quality, locally sourced teak from East Java, encourage the family-style dining of Indonesia’s tribal communities.
